THE CURATOR EDIT
My criteria are different when someone is visiting Cairo.
I’m not necessarily taking them to the newest restaurant.
I’m taking them somewhere that contributes to their understanding of the city.
Maybe it’s the Nile outside the window.
Maybe it’s Egyptian food done exceptionally well.
Maybe it’s somewhere glamorous enough to challenge every assumption they arrived with.
Maybe it’s a tiny place they would never find without me.
The perfect Cairo food itinerary should feel like Cairo itself:
old and new, chaotic and polished, local and increasingly global.
And yes, sometimes I will choose the restaurant because the room is beautiful.
I’m a travel publication, not a court of law.
THE CURATOR SAYS: The question isn’t “Where should I eat?” It’s “Where do I want them to remember Cairo?”
When showing a visitor Cairo, I think about geography as much as the menu. Khufu's near the pyramids is the kind of special lunch I'd reserve in advance; Zooba is a more casual introduction to Egyptian street-food classics. There's no point recommending a dinner across the city after a full day in Giza without acknowledging Cairo traffic.
